There is a noticeable difference between pasteurized milk cheeses and raw
milk cheeses. Maybe they are expensive becauuse of the extra care raw milk
must have, but it's worth it to have the real thing. The copies are mere
ghosts of what should be. Yes, I have had both and at the same time.
