The only ones I've seen are taco or Mexican ones. Some even have an eating
area. I've not tried the food. The ones I have seen are never located in a
place where I would feel the need to stop to eat.

There is a vegan truck at the farmers market, but the only other
truck I can think of is of the hot dog variety. From what I've read,
it's a popular truck, but really, I don't ever think Let me drive over
and get a hot dog (or whatever) from this truck. On top of that
it's right across the street from a great Italian deli, I know where
I'd go.

I'd love to see a Mexican truck.

I've never had that kind of lunch truck near where I've worked either,
but we have trucks in town that tweet their locations. They put out a
head's up Tweet saying they'll be a location x in 10 minutes and
customers are lined up, waiting for them when they arrive. Nice
little businesses and they are clean too.
