![]() yes that's the one....i know cause my parents came from Minho province and prepared this soup many times...i've been to Portugal several times and i can attest to the fact that they do not use kale (curly kind). in Portugal they use what they call "couve galega" a type of collard green which isn't grown here in the US. i believe the seeds are available from some place in California which deals in unusual/exotic seeds. i make this soup but i don't use kale, i make it with finely shredded/chopped collards, however the collards available in local supermarkets are slightly bitter and tough.and don't taste quite like the Portuguese "couve galega". this soup, Caldo Verde (green soup), became very popular throughout Portugal and eventually other cultures picked up on it and have made their own variations. ...but it definitely is not German in origin. |
