I want to make some kind of persimmon pastry as part of a brunch in late
October. I'll be cooking in a hotel room which has a kitchen complete with an oven, but not much in the way of cooking tools. The ideas I'm batting around a 1. Danish pastries with a persimmon filling 2. Small turnovers with a persimmon filling 3. Persimmon mini-muffins 4. Persimmon rugelach 5. Persimmon coffee cake Some pertinent considerations: * The turnovers wouldn't need a mixer. The muffins can also be made without a mixer, but the quality might suffer. I *can* bring a mixer, but it's not an attractive prospect. * There shouldn't be any time crunch; I should have plenty of time available. * The coffee cake is the least interesting option to me. Anybody have a favorite persimmon recipe which would work at brunch? Or a favorite brunch pastry recipe which I can adapt to include persimmons? Bob |
