Mexican-Asian Fusion Eggplant Salad?

Later this year I'll be cooking a "fusion" dinner for some friends of mine.
One of the things I want to make is a chunky eggplant salad which
incorporates Mexican and Indonesian flavors. What should go into it? Any
suggestions?
