That's a keeper!

Here's a variation using apples i occasionally make, pears work well also.

"Cotes de Porc a la Flamande"

"Season the cutlets and color them brown quickly in butter. Arrange
them in an earthenware dish and surround with thick slices of peeled,
cored sweet apples, allowing 3 & 1/2 ounce of apples per cutlet. Finish
cooking gently together in the oven and serve as it is in the dish."

Variations on this include:
Apple & pork chop dish "a la Liegeoise" made with juniper berries and
'flamed gin.' Lining the baking dish with sliced potatoes, adding either
cream or hard cider to the dish to make a sauce to be served with the
chops. And i have known of people using chopped cabbage & vinegar
instead of apples and brandy.

Pork and peaches are a great flavor combination! I prefer to grill
mine, but that's only minor difference.

Slapping forehead. I saw flour in the recipe, and that's why I
commented. I would not use flour if grilling them on a bbq. If I was
grilling them on a flat top, maybe... but I prefer flour in gravy, not
coating the chop.
