Default Real Cole Slaw

Two heads of cabbage shredded.
1/2 cup of the best olive oil you can purchase
1/4 cup of cider vinegar.
salt and pepper to taste.
Toss all and let sit to the next day.
Serve and reserve dressing to use over sliced cucumbers.

i've never used oil in slaw. (well, apart from the mayonnaise. and
that's not a huge amount.) it just seems odd.
