Default Cheesy Dinner Tonight


Leftover meat sauce for spaghetti morphed into layers of:

slices of eggplant layered with
dabs of ricotta
slices of mozzarella
sauce
repeat and top with shredded Parmesan

Bake 1.5 hours at 350 degrees.

Serve with a green salad.

It probably shortened our lives by a week or so,
but it was delicious.

What did you do with the eggplant before you made the dish? Did you slice,
salt, and dehydrate? Did you pre broil or grill the slices before putting
things together?

Eggplant was peeled, sliced, salted. I did not precook or dehydrate
it as an experiment but baked the casserole it until it was tender.
Husband noted the eggplant did not shrink down to half its size as usual
when it's grilled or broiled. It turned out well.

Sounds good. We had dinner at a local Italian place with June, Matt,
and the littles. Oh, my Alex! Meredith is adorable and speaks 8-word
sentences. LOL! J & C are growing. JunieBugBeBusy! I had pizza and
it was very, very good. It was not laden with cheese! Rob had gnocchi,
June had penne with seafood. Meredith ate the better part of a 10"
cheese pizza! LOL! Sam doesn't eat that much in two days. Matt may
have had lasagne.

The SO bought another eggplant today...... I think she's trying to let me
know she enjoyed the grilled eggplant I did a few days back :-)

No meat, but lots of recipes are similar except for one or two
ingredients.

Yep, but this time I'm going to do a parmesan encrusted eggplant.

I saw it on a cooking show and watched the SO sitting there drooling, so
files the idea awy till the right time :-)
