Default Plums, fresh and delicious!

Here is another that I picked up here. I have one too, but I usually make
this one from rfc.

Step right up, whoever wrote this recipe. As I recall it was someone from
the great Midwest, but I could be wrong.

Zwetschkenkuchen

1/2 cup granulated sugar

2 eggs

1 cup all purpose flour

1 teaspoon Baking Powder

a pinch of salt

grated rind of half a lemon

1 teaspoon vanilla extract

15 Italian Plums, cut in half with pits removed

Topping

1/2 tablespoon sugar

1/2 teaspoon ground cinnamon

1 tablespoon fresh lemon juice (do not use artificial juice for this
recipe)Cream the sugar with the butter, until light and fluffy. Add the
twoeggs, one at the time and mix them in. Add the vanilla and lemon peel.Add
the flour, baking powder and salt. When well mixed, transfer thedough to a
9" x 9" buttered baking pan. Slightly press the plum halves into the dough,
shiny side up.You should make five rows of five halves and use the left over
plums if there are any large spaces. If there are none, eat them. Sprinkle
sugar and cinnamon over the top of the cake and drizzle or drip the lemon
juice over it.

Put the baking pan into a preheated 350 degree oven. Bake for about an hour,
checking on the cake after 45 minutes, in case it gets done quicker. Cool it
completely before taking it out of the pan. I find iteasier to serve it
right out of the pan or to cut it into pieces before taking out the cake.
