Default Congee (juk)

Well, that was a wash.

Thought I'd give it a try. Jasmine rice in homemade chicken broth, 8
hrs in crockpot, add ginger, garlic, grn onions, cold chicken from
stock, etc. Smelled like butt-crack, tasted not much better. This
strange, cuz I made it about 7-8 yrs ago and don't recall disliking
it. OTOH, this is the first time I've made it since then, so I must
not have been impressed the first time, either.

For anyone else wanting to try, the water to rice ratio for a crockpot
is about 8/1.

One should be able flavor anything without using that crap MSG!

possibly the jasmine rice was the problem. i think plain white rice is
what's usually used.

The "jasmine" aroma would have cooked out, but it should still have tasted
okay. My initial guess would be that it had too much ginger; an excess can
give what might be called the "butt-crack" smell and flavor. It might have
been fixable by adding additional salt and maybe a squeeze of lemon juice.

Besides that, congee is pretty bland by nature; it's possible that notbob's
tastes have changed so that he now dislikes that degree of blandness.

Why did you use jasmine rice? Plain rice would have been nicer. Try it
again with unscented rice. Cook the rice without any additions other
than water. Use the other things as toppings. Eat with Chinese fried
bread :q

That's been my experience in restaurants and at the homes of Chinese
cooks. The toppings give character to the dish.
