Brown 1lb of ground beef with 8oz of sliced shrooms. Drain. Add a
can of Cream of Chicken soup and a can of Onion soup and one can of water. Bring back to a slow boil and simmer for a couple minutes. Turn off heat and add 1 cup of sour cream. Stir well. Serve over white rice, macaroni, or egg noodles. -sw |

While this really is what I had to eat tonight, this was a test to see how many and how quickly I could get a response to a briefly described, shitty recipe. It took all of 5 minutes and I got 4 responses in a couple hours. OTOH, I posted an honest and detailed description and method of a popular Cantonese dish, complete with pictures 10 hours ago and it hasn't received a single comment. Sometimes I really wonder about this group. If you're serious about cooking and contributing useful posts, nobody here really gives a shit. It's the OT and trash posts that get all the attention. I brown the beef with lots of onions, drain, then add mushrooms and saute slightly, & chicken soup only, Loads of fresh chopped garlic & fresh ground pepper, let that cook in, then the sour cream goes in at the end. Sometimes we eat it over toast, sometimes egg noodles. And I have used ground turkey in place of the hamburger. I guess not all of us have gormet taste buds. James, it's not what I'd call stroganoff either but I've seen the simple ground beef versions before. It's popular in some parts of the country. I use a fast thin cut (much like a stir fry cut) for mine. It's probably closer to what you are thinking of. Light roux with a binder of duck fat (may also use pork fat if using a mix of pork and beef for the meat). Add meat to separate pan while that melds and lightly brown to a still soft meat (you want about 50% done). Cream or sometimes a cream of mushroom soup can, added and mixed with the roux then lots of black pepper. Often a bit of worstershire sauce. A little pinch of msg (doesnt need much) then add the meat. Finish cooking being careful to not overcook. Turn off heat, add sour cream then serve over warm noodles with a veggie side. |

I usually read the first post of all threads unless it says something about cakes, cookies, pies, or doesn't have much of a description at all. My food curiosities (oddities) are different than others I guess. If I see a post entitled "Tobacco in Cooking" I would probably read it just for the enlightenment even though I would never, ever consider doing any such thing. I'll try and stay away from fermented fish descriptions, but I really do post them hoping some of the more adventurous will try them, if not in your own kitchen, then at a restaurant (and undoubtedly like them since you made the decision to try it in the first place). I guess y'all didn't like the "Mam Nem" article either ;-) Fermented fish products are excellent for flavoring foods, but I guess that makes me a unique/odd White Boy. Asian and Mediterranean cultures have been using them for ages, but they just haven't been "discovered" in the USA and Britain yet. Worcestershire sauce is a start.
