I didn't think rib eye/roast even though I read it clearly enough. I was
thinking chuck or round.

I think it might work. I'll give it a go and post back. I've got a nice,
dark ale that I'll sacrifice for the greater good.

I can see making a beer based gravy with the drippings... but
marinating a rib roast like it was cheapo sauerbraten is dumb.
