Recipes Courtesy of the book "Double Delicious!" by Jessica Seinfeld Caramel Corn (Courtesy of William Morrow) From the kitchen of Jessica Seinfeld | 14 Comments Servings: Over 8 Cook Time: 30-60 min We make this really special, easy-to-prepare treat for movie night at our house. Because of the sugar, I'm careful with the portion size and make little bowls for everyone. Ingredients # 1 ¼ cups popcorn kernels # 1 teaspoon canola oil # ¼ cup firmly packed light brown sugar # ¼ cup honey # ¾ cup sweet potato puree # ¼ cup flaxseed meal # ¼ teaspoon salt # Nonstick cooking spray # Cooking Directions 1. Preheat the oven to 450 degrees. Cook the pasta a few minutes less than the package instructions indicate so that it will still be firm when baked. Drain and set aside. 2. Pour the tomato sauce into medium bowl. Add the carrot puree and mix until well combined. 3. In another small bowl, combine the ricotta, cauliflower puree, egg whites, ½ cup of the mozzarella, garlic, and pepper. 4. Spread about half of the tomato sauce onto the bottom of a glass pan or casserole dish. Then add a layer with half the pasta. Spoon the ricotta mixture on top and cover with the rest of the pasta. Top it off with remaining sauce. Then sprinkle with the Parmesan and remaining mozzarella. Bake for about 30 minutes, until the cheese starts to brown and the filling is hot. Or cover with aluminum foil, refrigerate, and bake the next day. For the Sweet Potato Puree Cut into quarters if steaming (do not peel). Leave whole if roasting. Let steam for 40 to 45 minutes. Roast in a 400 degree oven for 50 to 60 minutes. She was sued by someone who said she plagiarized her work, her recipes, her theory, and her book. That's careless editing, but the error appears to be on the part of author of the article on the web site rather than the author of the book. The ungarbled recipe now appears at http://abcnews.go.com/GMA/recipe?id=12005700 and doesn't include any mention of ingredients not mentioned in the list of ingredients. It looks like the quoted recipe garbled the link given with another one for baked ziti (also from Jessica Seinfeld) at http://abcnews.go.com/GMA/recipe?id=12005013. Bob |
