Eeeeuw, why? There are so many tasty fruit fillings,
why muck it up with marshmallow to taste like a Twinkie?

It would probably work - I have a cookie recipe from the C & H
powdered sugar people that uses marshmallows enclosed in cookie dough
- I think the marshmallow essentially disappears in the baking
process, so you have a hollow cookie....I haven't ever made them, but
they always looked interesting - I think it was a Halloween treat
recipe - maybe "Spooky Cookies?"

If anyone wants me to post it, I'll get it out of the recipe box and
do so.

I enjoyed every minute they were in my mouth. Better than chocolate.

Interesting. That reminds me of a recipe in a book of lost recipes written
by America's Test Kitchen. The recipe is called Peach Puzzle, I think.
