Default It's just not Thanksgiving without.......................

For me it's not Thanksgiving without turkey, dressing, gravy, mashed
potatoes, and my cranberrysauce.
Everything else is just fine but I must have those 4 things.

What's your must haves?

Since it's just the two of us, we've pared Thanksgiving down
to the essentials:

tossed salad
turkey
dressing
gravy
cranberry-orange relish (usually consumed as dessert)

We eat around 5 or 6 pm. That allows us to put the
turkey on at a civilized 1 pm.

Occasionally DH sweet-talks me into making mashed potatoes,
but I don't see the point. If I get flustered at the end and don't
get the salad together, it'll be microwaved frozen green beans.

Quite often, I eat the carrots, onions, and celery from the
bottom of the roasting pan, but that's just opportunism.
I don't make roasted vegetables as often as I'd like.

I have to have home made mayo-dressed cole slaw. I just can't eat
turkey without it.

Broccoli is another, though I can manage with brussels sprouts. I don't
much care for the green beans with canned soup stuff. Gotta have a
green veggie. My guests always prefer the mashed potatoes, but I'm
partial to plain roasted sweet potato, so I pop a couple of yams into
the oven while the turkey is roasting.

I used to bake 3 pies every year: pecan, pumpkin and apple, but with low
carbing, I am making a pumpkin cheese cake that is generally appreciated.

A friend is making the dressing this year. Saves me time as I bake the
bread or corn bread myself for the dressing. I hate the crap in the
cello bags.

Little home made rolls are also important. I like to make tiny challahs
for dinner rolls.

Most, if not all the time, I make my own dressings. But haven't for
cole slaw. What's your recipe? I'm guessing there's probably sugar in
there somewhere.

CREAMED ONIONS AND CARROTS

1 1/2 to 2 lbs. small white onions or 2 cans (16 oz. each) whole
onions, heated and drained
2 tbsp. butter
2 tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper
1 1/2 c. half and half
1 1/2 c. shredded carrots

Peel onions. Heat several inches salted water to boiling. Add onions.
Cover and heat to boiling. Cook until tender, 15 to 30 minutes. Heat
butter over low heat until melted. Blend in flour, salt and pepper.
Cook over low heat, stirring constantly, until mixture is smooth and
bubbly; remove from heat. Stir in half and half. Heat to boiling,
stirring constantly. Boil and stir 1 minute. Stir in carrots, and cook
5 minutes longer. Pour sauce over hot onions. 4 to 6 servings.

4 large red or russet potatoes (2 lbs)
2 medium-sized sweet potatoes (1-1/2 lbs)
1/4 c. butter
1/2 c. milk

1/4 c. freshly grated Parmesan cheese

1/4 tsp. salt

Also cornbread dressing. I'm not a huge fan of turkey so I'm having a
standing rib roast for Thanksgiving. Brussels sprouts or baked cauliflower
if I can find it.

Me personally, I don't really like any of the foods traditionally served
at Thanksgiving, so I don't care at all what is served. My family has
preferences, though, so I cook for them. Must-haves around here include
turkey, stuffing, mashed potatoes, corn, and cranberry sauce.

Turkey, dressing, creamed onions, baked sweet potatoes. Haven't had creamed
onions since my mother died. I settle for whatever is served at the
relatives - just glad to be invited. And hope this coming Thanksgiving
isn't like the one last year when the snow was so deep at the end of my
driveway, a plow had to be called in before my neighbor could snow blow the
drive - long after dinner was over - 10 miles away - where they had green
grass!!!

That's my favorite answer so far! (But I'm surprised nobody has mentioned
football.)

For me, Thanksgiving is about a chill in the air, friends and family at the
table, and a reflection on how lucky I am to have the life I have. Food
enhances the occasion, but only plays a supporting role.

I'm with you on that one. Cornbread dressing has a gritty or sandy
texture to it. Of course I don't like cornbread either. Here's my
dressing recipe. I keep it simple.

1 20oz. loaf white bread
1 stick butter or margarine
1 medium size onion, diced
1 rib of celery, diced
turkey broth
poultry seasoning, salt, pepper to taste
1 beaten egg

Lay out the slices of bread overnight so they dry out. If they aren't
bone dry in the morning then pop them in a low oven to finish drying.
Crumble slices of bread into a large bowl. Melt butter over low
heat. Cook onions and celery in the butter until they are very soft
and celery has lost most of its color. This takes several minutes. I
don't like crunchy things in my dressing so I usually cook mine for a
good 15 minutes. Add the onions and celery to the bread and toss.
Add turkey or chicken broth until the dressing is the consistancy of a
thick batter. If it's soupy you've added too much liquid. Soupy
dressing isn't good. Add seasonings to taste. I usually add between
1 and 2 teaspoons of poultry seasoning, about a teaspoon of salt oe
less, and a good dash of pepper. Stir in beaten egg. Bake uncovered
at 350 until it looks done, about 30 - 45 minutes.

I know I will take flack for this here, but Stove Top Stuffing is a
must have.
After the turkey, of course.

Sure, I remember tearing the unsliced white bread apart for stuffing
when I was very little, and Mom diced the onions and celery and did
all that work, but once the good people at General Foods (before Kraft
took them over in the 80's) came out with Stove Top Stuffing, Mom
started making that, and to be honest, we all really liked it. So that
became our standard Thanksgiving stuffing. Dressing, whatever you want
to call it. For Thanksgiving, she frequently jazzed it up, adding
sauteed onions and celery to it, or sometimes a diced apple and
raisins. But that was the basis for Mom's stuffing. And my Mom and
Dad and the 3 of us kids, and eventually my two nephews, all came to
like Stove Top, to the point that it became the standard against which
all stuffing was measured.

During the years I prepared Thanksgiving for my family, I tinkered
with "homemade" dressing, either from packaged crumbs/croutons or from
stale bread. But to be honest, they always were too dense, or too
dry, or too moist or too salty, or too bland....something was usually
not quite right. Stove top stuffing was consistently good and
consistently the way my family liked it. Eventually, I just gave up
and gave in to it. If it tastes good and we like it, why bother
making it any other way?

Nowadays, I always add dried cranberries and sometimes slivered
almonds to it.
Today, I bought a ~7 lb oven roaster chicken (for ~$3.50), and without
any apology, I tossed a box of Stove Top stuffing in my carriage right
next to it. And I said, out loud, to myself "Stuffing just like Mom
used to make!!"

Nowadays, I enjoy Thanksgiving as the guest of my best friend and her
family. She's a wonderful friend, a good cook and I feel very welcome
and loved at her table, not just at holidays but all year 'round. Not
just from her, but from her kids and her parents, too. And there is
always Stove Top stuffing!

I'm making a pumpkin cheesecake for dessert this year. The recipe is
in every cooking related magazine out there this month. It's the one
in the Kraft cream cheese ad. Looks really good!

Those are the essentials, and the cranberry sauce must not be canned.
In fact no canned anything other than Swanson broth substituted for
water. I might add corn, made from frozen.

Last year I spent hours nursing 3 quarts of perfect turkey neck gravy,
forgot to serve it and no one asked for gravy... next day became LO
gravy and froze half.

Default It's just not Thanksgiving without.......................

For us it's now at my daughters home, I buy the turkey and make the
rutabegoes and the gravy at her house and she does the rest, Yay!!
turkey
sausage stuffing(with a small container of applesauce added)
giblet gravy(I have to fight off the thieves after the heart & liver)
cranberry sauce
Mashed rutabegoes, a BIG pot of em, and I'd better leave some home for
leftovers, cuz my dau & sil will scoff up any leftovers and hide them
whilst we're putting away foods.
pecan pie'
Then some time in the next week or so we have to go buy a turkey and
cook it here, cuz one or 2 meals of turkey just isn't enough!!!!
