I've reached the point that I have to live on the contents of my pantry and
freezer. Too much food. I don't know why I buy food that I can't eat right away. Must be a mind thing. Anyway, I had a slab of ribs in the freezer and decided this will be dinner tonight. I dry rubbed them with cayenne pepper, whole black pepper, onion powder, old bay seasoning, dried thyme and I can't remember what all else all pounded in the mortar and pestle. Cumin, I remember that was in there. Let it sit and made a braising liquid of white wine, wine vinegar, worcestershire sauce, honey and chopped garlic. I wrapped the rubbed ribs in foil and poured in the braising liquid saving some for later prep when cooked. The foil package is in a 250F oven for 2.5 hours and then will be cut into portions and the remaining braising liquid will be cooked down to a syrup and poured over the ribs, and then they'll be broiled until the sauce caramelizes. Now I need to figure out sides. I have some leftover spinach from thanksgiving. It was creamed but turned out yucky but maybe it can be saved with another cream sauce. It's two classes...the A&P are together, but my god hard. I was a nursing major but changed...I'll never make it into school here, out of 490 applicants last year, they took 60. They only take students with A's in all prior coursework. I love love love us government, politics, history, etc, so I've decided to teach that to high schoolers instead. Unfortunately, I didn't learn about the nursing program until after the drop date this term so I'm stuck with the classes.
