Default Company Beets

2 cups cooked beets
2 T beet juice
2 T butter or margarine
1/2 cup onion, sliced thin
1/4 cup celery, diced
salt and pepper to taste

Drain juice from cooked or canned beets, reserving 2 T juice. Melt
better or margarine in heavy pan. Add beet juice and remaining
ingredients. Cover and simmer until vegetables are tender, about 10
minutes. Serve hot.

Served with hot dogs and canned chili, with Jell-O 1-2-3's for
dessert, this will impress the most finicky eater!

I love beets but could do without the rest of it. Do they even still make
Jell-O 1-2-3? I used to love making that as a kid. Didn't like the taste
of it, but I liked to make it.
