http://www.lifestylefood.com.au/reci.../red-onion-jam Red Onion Jam Recipe by Anna Gare from Quickies In My Kitchen Ingredients * 1kg Spanish red onions, thinly sliced * 2 tablespoons vegetable oil * 1 cup white sugar * 1 teaspoon sea salt * 1/2 cup red wine vinegar Method 1. Peel and cut the onions in half and thinly slice length ways. 2. Place all ingredients in pot and fry the onions on high heat for a few minutes. 3. Reduce heat and cook for about ½ hour till all the liquid has absorbed and the onions are soft. 4. I don't blame them, do you? I was tonked on a honky tonkin' day once down south of Abilene. It felt pretty good. I was invited for barbecue pork shoulder and pig tails. Greens, turnip greens were, or should I say was served. Turnip greens was served along with all the fixins. We also had squirrel and raccoon, and possum. Squirrel is very tasty. You have to shoot a few though in order to satisfy hunger. |
