Default Chicken Parmesan

It's dinner tonight along with some steamed spinach. I decided to do it
lasagna style and baked the pasta in the sauce along with the chicken
after both were partially cooked first. The chicken was fried with a
breading only about 3 minutes on each side so it would finish in the
oven. The pasta was done to just prior to al dente.

There is some cottage cheese dollops in there. I usually like to use
ricotta but I have some cottage cheese to use up.

It looks good, Cheryl, but doesn't the breading get really soggy when
you cover it with the sauce? I would have browned the chicken "au
natural" or even poached it first.

It turned out really delicious. I froze about 4 packages for leftovers.

It wasn't crispy, but the flavor from the bread was there. I wouldn't
even say it was soggy. I'll have to see how the leftovers turn out.

Makes me think a cheesy chicken and spinach lasagna might be nice. Make
the bechamel thinner and add cheese of some kind. I don't like a LOT of
spinach and I don't want to haul out a gooey flap of it from between two
layers of pasta, either. If I was doing it, I'd use fresh spinach and
finely chop it before putting it in a lasagna. Then I could more evenly
distribute it. There's just something very nasty to me about chewing on
whole, cooked leaves. I'm not saying there's anything wrong with it, but
on pizza or in lasagna or quesadillas, all spinach has to be finely
chopped, and then used more heavily than an herb, but not so heavily that
it becomes the main part of a filling. I'd like about 25% spinach and 75%
other stuff.
