Default Ping sf: Cranberry-Apricot Rum Bread

Based on a KAF Quick Bread, but with cherry rum-soaked fruit. For
making minis I also learned with trying to double the recipe (into a
gloppy-runny mess) for baking several at a time, do not do it. Mix
just one batch at a time to pour four minis, and it's okay to let
those wait for the second mix so that eight can be baked at a
time....Picks

Cranberry-Apricot Rum Bread (with Picky tricks)
1/2 cup butter, room temp
3/4 cup white sugar
1/4 tsp. orange oil or 2 tsp. grated orange peel
1/2 tsp. salt
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. nutmeg
3 eggs
1-3/4 cups flour
1/2 cup milk
1 cup dried cranberries
1/2 cup dried apricots, chopped
1/2 cup pecans or walnuts, chopped
(Cherry Rum for soaking fruits to barely cover, about an hour,
stirring two of three times and do not drain.) Preheat the oven to
350F degrees. (These breads are stickers, so for minis cut parchment
for lengthwise "slings" to best lift breads out of pans, and Butter
Pam spray pan sides as well.)
Cream together the butter, sugar, orange oil or peel, the salt,
baking powder and spices until well blended. Beat in the eggs one at
a time, until fluffy after each.
Stir in the flour, and then add the milk 1/4 cup at a time,
stirring well after each addition. Gently mix in the still soaking
cranberries, apricots and rum, plus the nuts. (Cup) spoon batter into
8-1/2x4-1/2" loaf pan (4 mini pans). Bake for 50-55 minutes (40 for
minis), or until pick-tests clean. Remove breads from oven to cool in
pan for ten minutes (loosen right away to sling minis out on their
sides, peel off parchment, set upright on rack to cool).
