If I feel fancy I'll put onion. Just make a roux with the flour and butter, then add milk and cheese. Mix with macaroni. top with more cheese. Fancy is crumbled, cooked bacon, panko, whatever fresh herb you like, parsley and S&P tossed with melted butter and added to the top. -- Currently reading: Finals over! If you want to fancy it up, put a gratin on it, use a mixture of cheeses (this is another good time to use up ends and pieces) or both. -- Never trust a dog to watch your food. |

Thanks looks easy - I kind of like the mustard in Alton's recipe - I may use the sauce from yours - the kids want baby trees & cheese (AKA broccoli & cheese sauce) Dimitri |

My version is even easier because I don't premake the sauce in a pan. I just mix all the ingredients (top it with buttered bread crumbs) and let them make their own sauce while it's baking. Go lightly with the mustard and remember you're feeding kids, not adults - they may not like it. -- Never trust a dog to watch your food. |

The Cook's Country (or was it Cooks Illustrated?) had a VERY good mac and cheese recipe, also. |

Sprinkling some shredded parmasan on top can't hurt. It's one of the few Stouffer's products that's actually better than a lot of homemade mac/chs I've suffered. nb |

During the years 2005 to 2008 the Tillamook County Creamery Association sponsored a Macaroni & Cheese competition, with judges, prizes and winning recipes published on their web site. Go to <http://www.tillamookcheese.com> click on "Recipes", then on "Macaroni & Cheese". Some of them look really good. |

By coincidence I am planning to make a batch of Mac & Cheese tomorrow, as my partner is volunteering on a full-day basis both that day and the 26th, and I figure a large batch of the stuff will last through all three days. My standard ratio is 1/2 lb cheese per 1 lb of whole-wheate macaroni or ziti. Steve |
