Howdy;
Does anyone have a real good recipe for Rice Pudding for diabetics? Any suggestions would be greatly appreciated... Mother Carbon |

The first one is not something I would feed my diabetic DH. The second
one is half the carbs, but he doesn't care much for chocolate. Rice always spikes him. Even brown rice. BTW, I must be doing a good job. DH, diabetic for about 30 years and on an insulin pump, saw his endocrinologist the other day and his hemoglobin A1C was 6.2!!! I do but it has to be white rice and it has to be in very limited portions. Mostly it is something I eat only when I am very sick. I realize I am not the typical diabetic. The gastroparesis means I can not eat much fiber. But no way would I eat rice pudding no matter the recipe. |

Creamy Rice Pudding (diabetic from ADA) 6 Servings/Serving size: 1/6 recipe (about 2/3 cup) 2 cups water 1 cinnamon stick, broken into pieces 1 cup converted rice 4 cups skim milk 1/4 tsp salt 7&1/4 tsp Equal® for Recipes or 24 packets Equal® sweetener or 1 cup Equal® SpoonfulT 3 egg yolks 2 egg whites 1 tsp vanilla 1/4 cup raisins Ground cinnamon Ground nutmeg Heat water and cinnamon stick to boiling in large saucepan; stir in rice. Reduce heat and simmer, covered, until rice is tender and water absorbed, 20 to 25 minutes. Discard cinnamon stick. Add milk and salt; heat to boiling. Reduce heat and simmer, covered, until mixture starts to thicken, about 15 to 20 minutes, stirring frequently. (Milk will not be absorbed and pudding will thicken when it cools.) Remove from heat and cool 1 to 2 minutes; stir in Equal®. Beat egg yolks, egg whites, and vanilla into small bowl. Stir about 1/2 cup rice mixture into egg mixture; stir back in saucepan. Cook over low heat, stirring constantly, 1 to 2 minutes. Stir in raisins. Spoon pudding into serving bowl, sprinkle with cinnamon and nutmeg. Serve warm or room temperature. Exchanges Per Serving: Starch Exchange -- 2 Milk Exchange -- 1 Fat Exchange -- 1/2 Calories -- 244 Total Fat -- 3g Cholesterol -- 109mg Sodium -- 200mg Carbohydrate -- 43g Protein -- 11g |

They are more concerned with fat than they are woth carbohydrates. Someone should give them a class in diabetes management. We belong and subscribe because there is other good information in their magazine and they do fund research, but I've written to them over and over about their lack of responsibility to diabetics when they publish those terribly unhealthy recipes. Maybe that and a salad with a wee bit of meat on it and you'd have a full meal. For a meal, I'd sure want something more substantial than pudding! |

They never respond. Amazing. I try to keep carbs to arouind 15 grams per meal, per the dietician, although it's very hard to do. The ADA has some appalling recipes. |
