Default Chicken Mole

If I just thinned out some of Doņa Maria's mole sauce and just simmered
some browned shicken parts in it, would that be a venial sin? A jar
of the stuff jumped into my basket when I wasn't paying attention today.

Not at all. That's pretty much what mole is for, stewing/simmering
poultry in. A good homemade mole is soooo much better than the
off-the-shelf stuff, but it's so damn labor intensive, it's no shame
to buy pre-made. If you wanna go thru the pain, my nemesis, Rick the
Dick Bayless has a killer ricipe in his cookbook, One Rip-Off Plate At
a Time.

I made two kinds of chicken enchiladas yesterday, accompanied by beans
and rice. I discovered yesterday that I prefer the "no name" store
brand of refried beans over the name brand because no name has
discernable pieces of beans in it and the brand name is just pureed
mush. The rice was something I'd bought in the bulk bin called
"saffron" rice which stayed a nice yellow color after cooking.

A couple (okay, one) recipe I found online had the sauce simply being
poured over baked chicken and garnished with sesame seeds and sliced
almonds. Thanks. I've done this before but it's been a while and I
told you my brain is turning to Cream of Wheat. I'm sure Doņa Maria
and I will do well together.

Many of the Mexican ladies around here do that. A real full-scale mole
takes a lot of ingredients and a lot of time to prepare it properly. It
isn't everyday food for most of the families around here.

It was very good. Spiciness was just right. Extra sauce that the meat
simmered in will mingle with some leftover Costco rotis chicken over
rice later in the week, perhaps.

Extra sauce that was not cooked with the chicken is in a freezer bag for
another time. I think I'll write a reminder on my calendar to make it
in another 6 weeks or so.

I hadn't even looked at his website for about a year. I didn't friend
invite him either because I also don't friend persons I don't know
personally. I only have 20-something FB friends. Rolly has been
posting nice Mexican cooking stuff for several years. It's not all my
cup of tea, but I've gotten ideas from it. You could probably message
him through FB w/o friending him. He'd probably feel complimented
rather than bothered. He's very generous with info, and he's retired,
seemingly with plenty of time on his hands.
