Default Rec: ZUCCHINI CASSEROLE

With the garden producing a nice crop of zucchini, I thought that I
would share with you a good recipe using this lovely squash.

Wayne

ZUCCHINI CASSEROLE


3 C zucchini shredded
1 C Bisquick
1 C onion chopped
1 carrot grated
2 jalapenos chopped
½ C Parmesan cheese grated
3 tsp Parsley
½ tsp seasoned salt
½ tsp Oregano
1 clove garlic chopped
½ C oil
4 eggs
½ to ¾ C milk
dash pepper
1 C cheddar cheese grated
1 C celery chopped
1 can diced green chilies

Mix together, put in oblong buttered pan and bake at 350 degrees for 30
to 45 minutes. Top with sprinkle of extra Parmesan and several drops of
Tabasco.

You can add other veggies, and or meat. (diced cooked ham, sausage)

That sounds really good even without the ham or sausage.

I like the sound of this, I'm going to try it this summer when
zucchini isn't $2.00 per pound.

I believe that I'll make this on Friday, to serve on Saturday, using
matzoh meal instead of Bisquick, as the kitchen at the little
synagogue was koshered last week; and zukes here in Socal are at 50
cents a pound.
