Default bread experiment

i used Graham's baby bread recipe to test the new wave oven and see if this
place would support breadmaking. it works fine for the baking and cooks
evenly but i think i will try without the convection feature as the crust
was a bit too crunchy for my tastes. i am going to double the recipe next
time and see how that does, also i think overnight would do good here as
trying to keep it cool enough to breathe in here negatively impacts rizing
conditions,

Is there enough room in the oven to put in a small, covered casserole dish?
If so, try the Lahey method and pre-heat the casserole and lid, then, plop
the dough into it and put on the lid, bake for about thirty minutes before
removing the lid to brown off.
