I had two ears of corn that I wanted to stretch to serve three adults
and two children. I steamed the corn in the microwave. (Leftover corn works well in this, too. Grilled corn is delicious in this salad.) Then I cut the corn off of the cob and mixed it with two big chopped tomatoes. I dressed the salad with some olive oil and soy sauce. You could use oil and vinegar, Italian dressing, vinaigrette, lemon or lime juice, etc. Tara |

I assumed from the OP that the cupboard was bare. If we're suggesting ways to stretch, I'd dice up some zucchini and add a tiny pinch of cumin. -aem |

I was trying to use up leftover side dishes from the Fourth of July. Tara |

Salt it and steam it whole, then slice to put into the salad. For that matter, you could probably cook it in the microwave as well. Even pickled okra would work in that recipe. Bob |
