I want some !! :-) You can pour off the pork fat--which isn't as bad for plasma lipids as beef fat or even worse, butterfat--and replace the fat with a nice, neutral, high monounsaturate oil, while still allowing the fond to flavor the potatoes.. This morning I made fried potatoes. I didn't discard the bacon fat, but did add peanut oil. The moisture from the potatoes picked up the fond. If my family had cholesterol issues I would have poured off most of the bacon fat. To paraphrase the UNCF, a fond "is a terrible thing to waste." --Bryan |

Polly Why do you want them cholesterol free? You do know that the cholesterol you eat doesn't affect your body's cholesterol. Right? |

Animal fat is bad for your waistline and bad for your heart. My husband takes pills for his cholesterol. In his case, he needs to keep his HDL low and his LDL and high. His HDL is okay, but his LDL is still too low in spite of what he does right. -- I take life with a grain of salt, a slice of lemon and a shot of tequila. |

High cholesterol in food is usually associated with high levels of saturated fat. Saturated fat is correlated with high blood cholesterol. High blood cholesterol is correlated with heart problems. > Bacon is animal fat. Animal fat is bad for your waistline and bad for > your heart. My husband takes pills for his cholesterol. "Yeah" to the first part, but your husband's HDL and LDL goals are exactly backwards from mine (and everyone else I've heard of). -- Dan Abel Petaluma, California USA |

So out of the blue, in a thread about bacon-fond fried potatoes, you ask an unspecified person whether he or she has ever made migas or southwestern-style matzo brei -- and you expect people to look at the "quote tree" (which may or may not be visible, depending on how they're reading) to figure out who you are asking, and how it's supposed to fit into the discussion? Who WERE you asking, and how DOES it fit into the discussion about bacon-fond fried potatoes? Bob |
