Default dinner last night

First I had an early "appetizer" course (around 4pm) of
my first corn-on-the-cob of the year. I had 3 ears but
wanted more! Boy were they good.

Then I had the rest of my dinner around 6:30pm. I made a
new chili recipe. It called for 1 lb. each of ground
beef and ground pork, but I didn't have either. All I had
in the freezer was boneless country-style ribs and I didn't
want to spend money on more meat so I used them. I roasted them
for about 45 minutes and then let them cool. Then I diced the
meat fairly small. The other ingredients were onion, garlic,
minced jalapeno, diced bell peppers (1 each red, yellow, green).

It called for beer but I left that out and just added some water.
(I don't like beer in things, even though I do drink it on occasion.)
The recipe also called for chile powder, cumin, oregano, salt, and
pepper. And there were canned crushed tomatoes, canned diced tomatoes,
and canned black beans and kidney beans. Then it is garnished with
lime juice, shredded cheddar, and sour cream.

It is quite tasty but I think I'm going to be sorry I made it as
things made with tomato sauce give me pretty bad heartburn. I
could feel it coming on after I went to bed in spite of having
taken 2 Tums and a Zantac tablet. Woke up later and repeated
the Tums and Zantac. Since I'll be eating for at least a week
and a half it's going to cost me a bundle for antacids!

I also made Wayne's Cornbread. Well, mostly. I didn't have all
the ingredients in the recipe. It calls for yellow and white
stoneground cornmeal. Mine was not stoneground but I didn't have
the money to spend on the expensive stuff. It also calls for
masa harina which I did have. The other ingredients are canned
diced green chiles, canned cream-style corn, buttermilk, shredded
cheddar, corn oil, and eggs. Also baking powder and baking soda.
Oh, and minced jalapeno.

It turned out pretty good but I thought it would be moister with
the corn in it. And I couldn't taste the diced green chiles at all
in spite of adding 2 4 oz. cans (recipe called for a 7 oz. can).
I would have liked to have more taste from them and from the corn.
Still it's good. It goes well with the chili.

Then for dessert I made a rhubarb custard pie. Once again my pie
crust was even better than usual. (I've been on a roll in the
last year or so with pie crust. I mean, mine is always good and
much better than most other people's, and really much better than
anything you get in 99.99% of bakeries, etc., but lately it's been
really awesome.)

So the pie didn't really help with the heartburn issue. Probably
not the best choice of dessert to go with the chili. Should have
had a nice soothing bowl of ice cream or vanilla pudding or something.
But, damn it, I was craving rhubarb pie! So I will suffer the
consequences. Sigh!
