Default what are the roots of serving chili with rice?

In Texas a lot of restaurants serve "stuffed" baked potatoes. They use
huge Idaho bakers and cover them with Chili, cheese, onions, etc. Other
variations cover the spuds with either beef or pork BBQ.

Interesting... but it doesn't appeal to me so I've never had one.

I remember when I lived in New Orleans there was a place out in
Metairie that was called Pudgy's that was a stuffed baked potat place.
They had all kinds of toppings including crawfish, shrimp, brocolli, ,
you name it. I wonder if it is still there.

You have chili cheese fries too. And that sounds yucky to me.

Baked potatoes are great vehicles for leftover saucy meat -- chili,
BBQ, sloppy joe, taco meat, roast beef / pork and gravy. That's a
good lunch to pack if you have just a bit of meat left.
