Default Beijing Biscotti Surprise.

Cooking time: 1 hour.
Servings: Makes 2-1/2 dozen cookies.

Ingredients:
6 tablespoons unsalted butter at room temperature.
2/3-cup sugar.
1/4-teaspoon salt.
1 teaspoon vanilla.
1-1/2 teaspoons baking powder.
2 large eggs.
2 cups unbleached all-purpose flour.
1/4-cup sesame seeds.

Procedu

1. Heat oven to 350 degrees. Line a baking sheet with parchment
paper.

2. In a bowl, mix butter, sugar, salt, vanilla and baking powder
until smooth and creamy. Beat in the eggs, one at a time. Beat in
flour, mixing until smooth. Mix in sesame seeds.

3. Shape the dough into a rough log about 14 inches long, 2-1/2
inches wide and about 3/4 inch thick. Place the log on a cookie sheet
and bake for 25 minutes.

4. Remove from the oven and lower the temperature to 325 degrees.
Cool the log on the cookie sheet for 20 minutes.

5. Cut the biscotti into straight 1/2 inch slices. Arrange them so
they stand upright on the cookie sheet, keeping a little space between
the slices.

6. Bake for another 20 minutes.

7. Cool completely before storing in an airtight container or in the
freezer.
