Default Hey Andy.....beat this breakfast ! ;-)

I eat lightly for breakfast and lunch during the week and my main meal
is in the evening.
But on the weekends, when I can sleep in, I make a hearty breakfast
and that does me all day.

Today I made a 3 egg omelet with crispy bacon, sliced fresh mushrooms,
chopped green onions, tucked some white cheddar into the omelet when I
folded it, and topped it with salsa which I warmed in the pan.

Yum, Yum.

basically no carbs, high protein and will give me the energy I need
to do all the stuff I need to do today.

We made a 'Southwest' omelet in the restaurant with peppers, green
onions, bacon or sausage, cheese, and topped it with the 'gravy' part
of our house made chili and salsa. I didn't have any chili or I would
have used that as well.

Breakfast should be the best meal and supper the lightest. Still, your
breakfast sounds good!

That looks delicious and we make similar omelets here. Very nice.

A few years ago I had an omelet in New Orleans at Petunia's and it had
Swiss cheese in it. That has become my favorite omelet cheese.

Petunia's closed a couple of years ago, I think.

Your breakfast sounds great!! I have made pancakes lately, John eats
the whole bunch of them..

I'm sure there are those who that methodology works for. For myself,
a light breakfast of mainly protein and a light lunch of something
like a green smoothie keep me feeling alert and focused. If I eat
carbs I have the problem of the afternoon "drowsies".

I have always preferred a nice leisurely evening meal. Not
necessarily large or heavy, but filling.
Since I have cut out wheat and most high carb foods I can have a
really nice evening meal and still feel
focused, even having a glass of wine.

It's nice to be 'awake' and 'present', instead of being drowsy and
sluggish.

It works for me. You do what works for you.

I like Swiss cheese in omelets as well, especially one with ham and/or
spinach and other things.
Swiss and eggs is good together.
