Canned pumpkin, what to do with it?
 

I used to feed my cat some canned pumpkin daily with one of her meals in an
effort to control hairballs. Sadly, she had sudden kidney failure and had
to be put to sleep a few weeks ago. Now I have several almost two-pound
cans of pumpkin (not pie filling). Any suggestions? Not pie please.

Pumpkin cake rolls. Southern living has a pretty good recipe. It
won't be as good as if you make your own but it's still good. I don't
like pumpkin but I like the rolls Louise makes every year. Our
pumpkin is already done and in the freezer ready for the holidays.

This started out as a pie filling but now we just serve it as is:

PUMPKIN ICE CREAM

1 tablespoon unflavored gelatin
1/4 cup orange juice
1 1-pound can pumpkin
1/2 cup sugar
1/2 teaspoon each cinnamon, nutmeg, cloves and ground ginger
1/4 teaspooon salt
1 pint vanilla ice cream
Optional: whipped cream and mandarin orange sections

Dissolve gelatin in orange juice. In saucepan, combine pumpkin, sugar
and spices, and heat through. When hot, stir in dissolved gelatin.
Remove from heat and cool to room temperature. Spoon ice cream into
mixer bowl to soften, and beat until smooth. Add cooled pumpkin
mixture and beat until blended. Turn into serving bowl or individual
dishes, and chill at least 2 hours. Serve with whipped cream and
mandarin orange sections. if desired.

This is especially nice after a heavy Thanksgiving dinner.

I'm not big on pumpkin but the boss is and she loves ice cream. Thanks

Sorry to hear about your cat. I dread the day one of our two cats (brother
and sister) takes ill. They're starting to enter the kitty senescence zone.

My cat was 15. Except for some annoying digestive problems, she was a
seemingly heathly girl up until shortly before the end. The previous cat
lived to 17.

Male or female? Color? - I'd love another grey female. Long or short
hair? - I much prefer short - easier to keep groomed and clean up after.
