Default White vs. yellow corn meal: interchangeable?

Someone sent a box of Kenyon's white corn meal, intended for Jonny
Cakes. Not a fan of those, but can I just use it in lieu of yellow
corn meal?

Jonny Cakes: (per their package)

1 C Kenyon's stone ground white corn meal
1 tsp. sugar
1/2 tsp. salt
1 1/4 - 1 1/2 C. boiling water.

Add water to other ingreeds in a bowl, mix til makes a 'ploppy'
batter, adding milk to a consistency til it drops off end of a spoon.
Drop onto a well greased griddle, cook 6 min., drizzle with oil,
flip and cook ano. 6 minutes.

Serve with maple syrup, preserves etc.

I haven't had jonny cakes since moving from RI 27 yrs. ago. I remember
them fondly. I made quite a few visits to the Kenyon grist mill when we
lived there. They were nice people and turned out a nice variety of
products.

Thanks for the reminder. That may be what we have for Sunday night
supper this week.

I have found white and yellow corn meal to be interchangeable, though
the yellow seems (to me) to have a wee bit more corn taste.

I put strawberry frosting on a johnny cake once. It was disgusting.

Nonsense. The only difference is the colour of the corn that is ground.
The manufacturers say it is interchangable.

I'm not crazy about white chocolate, but I do get a craving for it
occasionally.

They are not the same, but they are interchangeable. I like yellow
better. What you've got to watch out for is "corn meal mix". It's
something like half cornmeal and half self-rising flour. (which might
actually work in your recipe) It comes in a bag that looks just like
cornmeal, and it can really screw you up if you need one and buy the other.

Wee bit? It's pretty profound to my taste,
though I wonder how much of that is psychological.
I despise white corn meal in all its forms for
that reason. Nevertheless, now that OP has it,
she should try it in familiar recipies so she knows
whether she's a normal person or a white-corn-meal-
loving pervert.

Sure you can. You can also use it to make cornbread or corn muffins. White
vs. yellow is all a matter of preference. Boli and I used to "joust" about
this quite a bit. I prefer yellow cornmeal, he prefers white. But really,
it doesn't matter.

They are different colors. That may affect the end color of your dish.
