My dad used to always be in charge but we don't have him with us anymore. Alton made it look so easy. |

Be sure to include some sort of container - er, drip pan - to use when thawing that critter in the fridge! Just today, I learned the hard way when thawing a 'butt' roast and didn't include that 'drip pan'! Talk about a mess - all sorts of unwanted gravitational bloody 'drippings' in the (secondary - whew!) fridge! And the roast was even enclosed in a (leaky!) plastic grocery bag, too! Oh well - Live 'n learn ;> Sky -- Ultra Ultimate Kitchen Rule - Use the Timer! Ultimate Kitchen Rule -- Cook's Choice!! |

Bacteriological growth is directly proportional to temperature. The higher the temp the faster the growth! Think about it that way. And there's no filthier food than fowl! John Kuthe... |

He directs you to brine, store, thaw there with the item in a container to limit the damage if there is a leak or an accident. Good advice. Janet US |

I'm going to relatives for Thanksgiving and will not be making a turkey, but I almost want to buy a turkey just so I can try Alton's carving technique as I've always butchered turkeys in the past. Watching him carve the turkey was the highlight of the Thanksgiving Live show. |
