Default My New Cuisinart

My new 7 cup Cuisinart came today. I haven't used it yet,, but it looks
just awesome. It came with the plastic dough kneading blade, the regular
metal blade, a slicing disc and a shredding disc. I got it at Kohl's
online with discounts and free shipping for a lot less than I've seen it
anywhere else.

Can't wait to use it for some Thanksgiving cookery.

A food processor is one thing I have never had, other than a mini Krupps
that I use constantly. Thanks for posting this as I'll have to have a
look! I hope you enjoy it!

I had a 20% off coupon from Kohls and another coupon for free shipping.

I don't know what other accessories I'd need.

A spare bowl is always useful.

And, if it's available for your model, I prefer the flat cover with just a small
(1-1/4" diameter) opening in the top for most uses. I almost never use the
normal cover with the large feed tube. As a matter of fact, I just realized that
I don't even know where it is! 8)

YMMV, of course.

I often wish I had some sort of funnel type thing for feeding in
flour, because I make all my doughs in the FP. So, I jerry-rig up my
metal canning funnel to do it. I never use the plastic blade, I use
the metal one for everything.

It's always handy to have a shredding disk. The shredder and two
sizes of slicing when I bought this Cuisinart. I slice occasionally,
but of the 3 - my shredding disk gets the workout.

Congratulations! My Cuisinart is old enough for you to have seen it on
my counter, and still going strong.

Both Julia Child and Marc Bittman prefer the steel blade for kneading
dough. I used the plastic one once and learned that, if it was no
worse, it certainly is no better. (It might be easier to clean.) I
recently added a fine grater disk, the kind with raised teeth but no
holes. It's good for Parmesan and Romano. Enjoy!

I use the shredding disk that came with my machine and it works just
fine for carrot cake, but I like to see carrot in my cake so maybe
that's the difference. I'd like a smaller shredder too, but I think
I'd buy a coarse julienne before I bought that.

My KitchenAid was purchased in 2006 and came with 3 bowls, a juicer
and a storage case for the extra disks and blades. If this new idea
of an adjustable disk works that would be really great, but you need
the new machine in order to have that feature.

My 11 cup model is pretty old now. It was the biggest model when I
bought it. I bought that one when the case on my 8 cup model (that
was purchased well before the great divide happened) gave up the
ghost... so it will probably be a while before I have a good excuse
for a new one.

I just know that this machine and I will definitely find true love. I'm
not really interested in using it for dough. I have a KA stand mixer
with dough hook that has never been used. I'm so old fashioned that I
need to feel the dough with my hands or I just can't tell if it's
kneaded properly. I do have a pizza dough recipe for the FP that I
haven't used in years because the one I have is just too small. I might
try it for that.

I have always used the coarse shredder. If I want something shredded
finer, I put the shreds into the bowl with the blade and pulse it a
couple of times. Works especially well for potato pancakes. I keep the
coarse shreds in ice water until I've finished all the shredding, then
squeeze them out and put them in the bowl with the blade. Pulse, pulse
and it's perfect.

When I left the US my daughter took my stand mixer which I had had since she
was a little girl, "Because it makes cheesecake." Oddly enough it hasn't
yet made one since I left.

I don't use my 7 cup very often, but the Little Pro Plus gets used all
the time. It's well over 15 years old and works like new. I bought
an unopened NOS one off eBay in case it ever does go bad. It has
juiced thousands of limes, lemons, oranges and grapefruits.

I use my KA for bread recipes and I use my Cuisinart for pizza dough.
Here's my recipe. It makes three 14 inch pizzas but you can scale it
down if you need less.

Why scale it down, freeze part and save effort for next go round. If
you have pizza often then double your recipe and freeze half...
freezing doesn't harm bread doughs. I'd scale enough for individual
pies, unrisen dough takes very little freezer space... the day before
move how much you want to your fridge... pizza dough should be cold
when it hits the oven.
