Sorry if this has been covered.
I'm amazed how cheap spices are from online sources (e.g. Penzey's, Spice Barn, many others) compared to local grocery stores (Safeway here rin 95620 charges $6.99 for ONE Oz of sesame seeds). The question I have is: "What's the best way to store bulk spices/herbs/seeds/&tc."? I'm looking for a specific brand of plastic, glass, whatever storage containers that will keep the pantry moths out (fer chrissakes they invaded and destroyed my "super-hot" cayenne pepper flakes). But I don't keep them too long, as I don't very much at one time. |

You can also buy the jars separately for spices you already have. I've kept all my spices and herbs in those jars in a srawer for years, and never had an infestation. Felice |

I have a batch of provencial herbs I bought in Paris a number of years ago, and they still add "prov. herb" to a dish just fine. If you're in a metropolitan area that has an Indian market, search that out for bulk spices. Bulk spices are 10% of the cost of the comparable Safeway product, and they're usually much better. Kent |

I don't know necessarily that the freezing kills the moths; maybe it just inhibits their reproduction. And a silly trick - I spread still wrapped sticks of Wrigley's Doublemint gum on the shelves of our pantry. Moths hate it as much as your 3rd grade teacher did. No joke. Polly |

If I buy specialty flours or mixes straight from a mill that grinds/mixes them, I keep them in the freezer for a few days. It does kill whatever little potential critters might be lurking. For commercial flours and mixes, there is not as much of a problem as those products go through more handling and processing than the specialty, straight-from-the-mill items do. I have only had pantry moths once, and they were there when we moved in. The previous occupants had left behind a hell of a mess in the kitchen, and the bugs were living the high life in there. It took several months to get all of them out, several months of repeated vacuumings, washings, changing shelf liners, and discovering surprise hidden stashes of massively infested foodstuffs at the backs of very high cupboards and behind very low ones. Meanwhile, all of our stuff was encased in plastic containers and safe from penetration, or in the fridge or freezer. |

An email friend sent me some seeds from her garden for "Wild Everglade Tomatoes" I started them in the winter and in the summer planted them outside. I walked by one of the plants during that summer and something bright caugh my eye. I looked again and on the leaves was a brightly colored spider with red, black and white. I did a seach and found it was an Everglades spider. I can't remember the name of it now. So I think the seeds had a spider egg on it. Lucille |

I use glass jars but they aren't in the light unless I use them up frequently. Anything with a tight lid is all you need, and if you can store them in the dark, you can use glass. You probably don't want to store them in the original containers, if you have trouble with pantry moths. (Sometimes pantry moth eggs can be in the container, not necessarily in the product itself - and then they infest your cupboard.) I bought my containers at http://www.stacksandstacks.com/. Martha Stewart has a line of tins....too expensive for me. N. |

Freezing glass is a big no no, it can easily shatter. I've found that the mylar type zip-loc bags from Penzeys make the best freezer bags, they take up minimum space too. |
