Default Oster breadmaker?

I got one for free and actually like the thing -- at least no more messy, doughy hands for one plus a controlled temperature for rising is very nice.

I want to start using it just for dough for the most part and I don't see any times listed for the dough cycle.

I want to knead as long as I can and rise as long as possible also.

The french bread setting gives the longest times for these, including 2 rise cycles.

Anyone know if the "dough" setting is even longer? My model is 4811 I believe.

Also -- the "delay" setting -- is that a delay till it starts everything or delay until it bakes? (I think it's till it starts).

If it's a simple model, it might not have a dough setting. No matter,
you can take it out anytime during the rise cycles. The delay cycle
allows you to start the machine in the middle of the night so that
it's ready when you wake up. I've used the delay cycle a lot when I
had a machine. Adding some gluten improves the bread when you use the
French bread cycle. Have fun! ðŸ‘ðŸž

Am I crazy or do I really like this thing? Making some pizza dough right now and using the french bread cycle -- sure beats buying that Kitchen aid I always wanted.

I think the rise temperature could be higher, I put a thermometer in there and don't even see it budge. Must only be about 80 degress or so in there.

Good idea adding gluten.

Here I was trying to avoid carbs -- damn.
