Smart and Final (discount warehouse) had a sale on huge bags of boned and
skinned chicken breasts. So I will make this tonight. I also purchased 15 lbs. of pastas. Yumm! Charlie CHICKEN SAUTÉ ARCHDUKE Source: unknown 4 tbs. butter 3 lbs frying chicken, cut up OR 8 breast halves, skinned and boned 1/2 cup minced onion 1/2 cup white wine 1 heaping tbs. paprika 1 tsp. fresh lemon juice salt pepper 2/3 cup crème fraiche or heavy cream Melt 2 tbs. butter in a large skillet over medium high heat. Add chicken and sauté on both sides until golden brown. Remove chicken from skillet. Using same skillet, melt the remaining butter over medium-high heat and stir in onion. Reduce heat to medium, cover and cook 10 to 15 minutes. Return chicken to skillet along with lemon juice, salt and pepper. Cover and simmer 45 to 50 minutes, or until chicken is tender and juices run clear. Slowly stir in cream. Cover and simmer several minutes until heated through. Note: This is a simplified recipe. It is traditionally served with long-grain rice and little rounds of peeled cucumber sautéed briefly in butter and dusted with salt and freshly ground pepper. |

I've never looked for it. This recipe is good enough for me! I made the whole recipe except for the cream and froze it in separate servings. I add the cream when reheating the dish. Works well for me. I hope you enjoy it! Charlie |
