It's kinda bland and it's around a stew consistency. Sometimes i top it with cottage cheese. I know it sounds weird, but I like it. -J |

Pork and refried beans with a lot of hot sauce and sour ceam is a great meal. But this is Jimmy Dean breakfast sausage. Paul |

I've asked about this on the diabetes food newsgroup and plenty of people there put no starches in at all. I use gluten free oats. Just a small amount and they are whizzed in the food processor prior. I also add some ground flax seeds and baby food squash instead of egg. And a ton of vegetables which have also been processed prior then cooked down very well to the point where there is very little liquid left. I also add some tomato juice or V8 or similar. Whatever I have in the house. I season this with Italian seasoning but I would not use that for a breakfast sausage. Probably wouldn't add any other seasoning except perhaps for salt and pepper which I also add to mine. Oh and a lot of ketchup but you could use plain tomato sauce for less carbs. I shape into somewhat largish individual loaves. I top these with ketchup or chili sauce which I would also leave off for that type of sausage. Bake at 350 for about an hour on foil lined lipped cookie sheets for easier clean up. Let rest for about 10 minutes before serving. |

Breakfast sausage is loaded with sage, not much but typical breakfast fare works well; eggs, toast, pancakes, fried spuds, beans... and there is nothing low carb about minestrone, without the beans and pasta it's not minestrone. It's difficult to use sausage in an interesting low carb meal, especially breakfast sausage... at least kielbasa goes well braised with kraut. Bulk breakfast sausage works well baked into the cavity of winter squash... *may* even work in ratatouille, but far from the best sausage choice. It's called breakfast sausage for a reason. |

I hate the flavor, the texture, everything about it. Saltine crackers are a little better, but it's still a lose - lose situation. After much experimentation, I decided a long time ago that I prefer an all meat meatloaf (with onions and maybe other vegetables, but no bread). I use barley in my meatloaf - thoroughly cooked before adding - it's amazing how much liquid barley can absorb. |
