Default Baking at 4 in the morning

So I can't sleep. What else is new?

I discovered I have all the ingredients for ... BIALYS! So I am making a
batch I hope to have done by 7:00am. I have the yeast proofing and the
onions sautéing. Seeing as I can eat just one of these darlings somebody
is going to be very lucky. I will get some cream cheese and lox commest the
dawn and foist them on an unsuspecting , though lucky, client. With any
luck I'll score a contract for work.

Food is the best aphrodisiac .. and bribe.

I've done that for many years; bagels too! My procedure for defrosting is:
1 Nuke 20 secs per bagel or bialy
2 Put in cold oven
3 Set oven to 350 and take out when the set temperature is reached.

So, how did they turn out?



Sigh, yeast malfunction. I can only assume I used too hot water. Which is
odd because it felt OK to the touch. I typically use filtered water warmed
to around 95 or so. This time it did not proof and I had no more yeast on
hand. Will try again. Not like I expect to start sleeping any better.

Bummer about the fail- next time will be better, I'm sure. Have you
tried Melatonin for your sleeping issues?


I have a bottle, yes. It does help me sleep once I get to sleep. Luckily
the economy has lowered my work flow to bare subsistence so I can sleep and
bake more.

Too bad. I was thinking of trying some stuff named MidNite. The
sleeping problems get old after a while.

Do it while you can, I guess? Maybe use your baking skills to help
with the work flow...I know there are plenty of people willing to pay
for the real thing...

No kidding...I can get to sleep, but then wake at 2-3. Not sure if
it's the Fibromyalgia or just the aging process...

No kidding...I can get to sleep, but then wake at 2-3. Not sure if

Or it could be your glucose is spiking during your post-prandial fast.
Diabetics call those liver dumps and are associated with a normal event
called he Dawn Syndrome.. You may want to get a free meter and check your
BG when you wake up in the early morning.

My personal theory (which is probably already proven false somewhere) is
that poor sleep leads to fibromyalgia, which in turn leads to more poor
sleep, which leads to aggravated fibromyalgia, etc.
