Default REC: Quick tomato soup

That's what was for dinner. The recipe is from

I suspect it is by Xanthe Clay, though this is not explicitly stated on
the paper's Web site.

The soup does indeed take only a few minutes to prepare, being
semi-homemade, so to say... I used passata instead of whole tomatoes.

Quick tomato soup
Makes four little cupfuls or two bowlfuls

The chilli sauce is optional, but often popular with even small
children.

1 tbsp butter
1 clove garlic
400g tin of tomatoes
1 tbsp tomato purée
A shake of sweet chilli sauce (optional)
Nutmeg (optional)

* Melt the butter in a small pan and crush in the garlic.

* Allow to cook gently for a few seconds, then tip the tomatoes into the
pan, along with the tomato purée, about

* 8 fl oz/225ml water, and shake in some chilli sauce.

* As it heats, whizz it with a hand blender until smooth. Don't let the
mixture boil if you can avoid it.

* Season lightly with a grating of nutmeg.
