Default Roman Chicken and polenta photos +recipe link


The Roman Chicken recipe was very tasty. I had a bag of Trader Joe's
multi-colored bell peppers, so I used that. I also didn't bother with
the prosciutto because I didn't want that flavor with chicken and I
forgot to add the capers... but all's well that ends well.

BTW: cooking polenta in the oven is "easy as pie", and highly
recommended by me.

It looks good and even creamy. I don't mind the pepper at all, since I love
it. I probably can't make polenta this way in Italy because they may refuse
me a permit to stay if I do, but I'm pleased to hear it went well.

Nothing wrong with serving soft polenta in a bowl and putting a brothy sauce
on top of it. I realize your mother never did that, but the soldier-clients
kept her *so* busy...
