Default Weeping vegetables?

If I add certain vegetables to a stew, I will end up with more liquid
than I started with, because the vegetables weep out their moisture.
This is true of summer squash and tomatoes, but the carrot soup thread
made me wonder if there are other weepy vegetables.

The search engines are absolutely no help here, suggesting I want
either information on peeling vegetables or on weeping cherry trees.

Well of course they give off liquid! Vegetables always do. This is why you
don't add much liquid to a stew. Or if you want the liquid to thicken,
remove it, cook it down in a separate pan or add thickening to it.

Look for any list of low carb veggies. The low carb ones have a high
percentage of water in their weight.
