Baked Cherry Tomatoes with Feta Cheese - a Greek recipe
Mezes me ntomatakia kai feta is a Greek appetizer. Serves 6. 15 grams net carbs per serving. 1 Tbsp minced garlic 2/3 cup olive oil 2 lb cherry tomatoes 6 ounces soft feta cheese 2/3 cup basil, slivered French bread Cut the cheese into 1/2 inch cubes. Steep the garlic in the olive oil for 30 minutes or more. While you are doing that, preheat the oven to 400° F. Toast the bread lightly Wash and stem the tomatoes. Halve the tomatoes. Turn the tomato halves into a shallow baking dish. Pour the olive oil/garlic mixture over the tomatoes. Toss lightly to thoroughly coat the halves with oil. Bake for 10 minutes. Sprinkle chunks of cheese and the basil over the tomatoes. Stir gently. This is similar and was also an appetizer when I got the original recipe. I've changed it a lot so I can call it mine now. We've had it as a stand alone meal for dinner many times. I do use the optional ingredients. Sometimes I'll drop a chunk of gorgonzolla in the corner of the pan but I don't mix it with the shrimp. The bleu cheese and tomato on the bread is great. Roasted Tomatoes With Shrimp And Feta 5 large tomatoes, cut into eights 3 tb. olive oil 2 tb. minced garlic 3/4 tsp. kosher salt 3/4 tsp. fresh ground black pepper 1 1/2 lbs. medium shrimp, peeled-deveined 1/2 cup chopped fresh parsley 2 tb. lemon juice 1 cup crumbled feta <oregano and scallions optional> Preheat oven to 450F Shake excess liquid from tomatoes and place in large baking dish. Spoon olive oil and garlic all over. Sprinkle with salt and pepper. Toss to coat. Place in oven for 20-25 minutes. Stir in shrimp, parsley, and lemon juice. Sprinkle with crumbled feta Return to oven for 10-15 minutes or until shrimp are done. Serve on crusty bread or crudettes. |
