Default Soup.... holy cow!

I cooked my sweetie nice dinner for Valentine Day..... lamb shanks
brained in dark beer and served it on a bed of barley. One Sunday we
had a prime rib with jus. Last night we sliced up the leftover beef and
heated it up in the jus. After dinner I used all the leftovers to make
soup. The sauce from the lamb had been made with carrot, onion, celery
and a bit of garlic along with some bay leaf and thyme.

I made soup with the leftovers and the leftover left overs. I simmered
the beef bones for a couple hours along with all the gristly bits of
beef. Then I added the left over jus and the barley. I had some for
supper tonight and Holy Cow.... it was delicious. It was one of the best
soups I have ever made, one the the best I have ever had.

Don't try! Just relish the memory.

Exactly! I made a batch of chili years ago that was the best I'd ever
made, but never was able to make it quite as good again. That's OK, it
always came out good. Just sometimes better than others. I only use
the "recipe" as a guide for what and about how much to put in.

That's okay. I had a lesson in soup making that gave me confidence to
tackle soups, and successes like this just inspire me to try more new
things.
