It was invented by a U.S. physician, J. H. Salisbury, to encourage a lo-carb diet for losing weight. The Miriam-Webster dictionary says the term has been in use in the U.S. since 1897. Salisbury Steak is made from ground beef. Swiss Steak is made from a tough cut of beef that has been "Swissed", that is, pounded or run through bladed rollers to tenderize it. |
