Default Garlic butter in restaurants?

I don't think I've ever eaten garlic butter in a restaurant. That seems odd
to me, because it's so delicious.

I just mixed some melted garlic butter with red potatoes. Holy macaroni.

Maybe restaurants avoid garlic in butter because garlic isn't obvious to the
eye? Or maybe it's because it makes peoples breath stink?

I've see thyme butter often. Maybe thyme goes better with surf and turf? Or
maybe it freshens people's breath?

I served compound butters with different dishes. My customers loved
them. Here are a few you could play with.

This is the one I used most often.

When I used to go out and order steak, I always asked them for garlic
butter to put on it.

I used to *love* garlic butter on a hot steak... YUM!!

The restaurant was on the 'civic' square with the city hall, county
courthouse, and public library. The name Hizzoner's referred to the
mayor as being the place for everyone in that area to eat.

Used to be a place in Lynnwood that served garlic butter with their homemade
bread. It was a Greek place that was bought out by some people who were
half Japanese. They eventually changed the menu and it became quite odd.
They kept a few of the Greek dishes but then added some other expensive
things and tried to make it upscale. The sad thing is, it was once a Rax
which was a fast food type of sandwich place that didn't last at all. It
was a chain. Not sure if it is still in business or not. So it wasn't an
upscale type of place to begin with and they did little in the way of decor
to warrant those prices. They had to close and now it is a crappy breakfast
place.

I've only been to one restaurant that put flavored butter on the table
to eat with the bread. It was a delicious garlic compound butter. As
far as putting compound butter on vegetables or meat, either it's not
done out here or I don't patronize the kind of restaurant that does
it. I think it's the former, because olive oil (flavored or not)
seems to be preferred over butter out here.

I used roasted garlic the one and only time I made hummus. It was
very good, but I was trying to use up what I had on hand and put in
what turned out to be too much. Never thought there was such a thing
as too much roasted garlic before that, but apparently I crossed the
line.

I'm finding the fresh garlic has too much of a tang to it, but I can eat
roasted garlic till the cows come home :-)


How much roasted garlic did you put in your hummus? I only used two cloves
to approx 400g of chick peas.


Also, to roast my garlic, I cut the top off, drizzle with EVOO, sprinkle
some Maldon and cracked black pepper on, then wrap in alfoil and put in the
oven for about 15-20mins, depending on how many heads of garlic I'm doing.

Soaking in water 24-36hours, that is changed every 4 hours or so, would
take away any 'impurities'.

It was a while ago, so I don't remember - in fact, I never knew. They
were mashed already, so I had no way to count. Maybe 4-6 for that
amount of garbanzos. Hey, roasting mellows garlic so I took a chance.

Mixed with *good* butter and some parsley, on a crusty oven baked
baugette..... frikken delicious!!
Same butter chunked up under the skin of a chook for roasting..... YUM!!

A good chunk of the same butter put onto a just grilled rump, or eye fillet
steak.... bloody heaven!!

And roasted garlic mash, with butter and some cheese...... just divine!!

*Everyone* should eat garlic..... then no-one would stink ;-)
