BUTTER MOCHI
1 pound mochiko 2 1/4 cups sugar 1 teaspoon baking powder 1/2 cup butter, melted and cooled 3 cups whole milk 5 eggs vanilla extract 1 cup sweetened, flaked coconut Combine dry ingredients except coconut. Mix butter, milk, eggs, and vanilla. Combine with dry mixture. Stir with wire whisk until smooth. Add coconut and mix. Pour into greased 13" X 9" pan and bake @ 350 degrees for a little over an hour. Slice when cool. |

You can buy butter mochi in the store these days and there's a lot of recipes around but most of them use coconut milk and/or canned milk. This one uses neither which makes it simpler. I post it here for safekeeping. |

You can stir the flaked coconut into the mix or sprinkle it on the top before baking for a festive look. I made a pan last night. This was the healthier version... I forgot to add the sugar. Ha ha. It appears the GG is no longer relaying message created on their domain to NNTP servers.
