Default Butter Mochi

BUTTER MOCHI

1 pound mochiko
2 1/4 cups sugar
1 teaspoon baking powder
1/2 cup butter, melted and cooled
3 cups whole milk
5 eggs
vanilla extract
1 cup sweetened, flaked coconut

Combine dry ingredients except coconut. Mix butter, milk, eggs, and
vanilla. Combine with dry mixture. Stir with wire whisk until smooth.
Add coconut and mix. Pour into greased 13" X 9" pan and bake @ 350
degrees for a little over an hour. Slice when cool.

Saved. I've never tasted mochi, but coconut is a real draw.

I lost this recipe which I used to make when my son was little. You can buy butter mochi in the store these days and there's a lot of recipes around but most of them use coconut milk and/or canned milk. This one uses neither which makes it simpler. I post it here for safekeeping.

Whoa! I just reveiwed the recipe!! That IS a lot of sugar! I thought
at first is was a kind of cake make with rice flour, but with that
much sugar it's be more like a cookie or brownie!

The recipe comes out looking like a cake but looks are deceiving. The
texture is nothing like a cake or brownie. It's chewy and a little gooey.

You might like the other recipes with the evaporated and/or coconut
milks better but this is my favorite. You can stir the flaked coconut
into the mix or sprinkle it on the top before baking for a festive look.
You could also get creative.

My guess is that most folks on the mainland have never baked up a batch
of mochi. I just don't want them to get their hopes up too high cause it
really looks like a tasty cake. :-)

I made a pan last night. This was the healthier version... I forgot to
add the sugar. Ha ha.

It appears the GG is no longer relaying message created on their domain
to NNTP servers. That's the breaks.
