Default DIY washing soda for bagels


In honor of the bagel thread and the fact that I'm making bagels today
and don't have lye, nor do I want to buy any... I'm making washing
soda out of baking soda, but I'm not sure how long to bake it or what
it's supposed to look like when it's "done".

It looks a little different, but I'm not sure if I should quit now or
bake it more. I guess I'll give it 10 more minutes in the oven and
see how it goes.

Baking Soda


Instructions

1. Fill a wide baking dish with baking soda.
2. Heat in the oven at 400 degrees until all the baking soda becomes
washing soda. Occasionally mix it so that this process happens faster
and more uniformly.

What is the need of separate washing soda for bagels. It can be washed with any regular washing soda.

How can you tell when the transformation from baking soda to washing
soda has taken place?

I'm fine with that. I ended up making pretzels though. Did the water
bath and something went wrong. The first batch was fine but the next
batch was a water logged mess. We trouble shot it over in rfc on FB
and concluded that I needed to let them sit long enough to form a skin
before I let them soak in the hot tub.

Thanks for the info. Sounds like the water bath part might be tricky.

Did you cost out this method vs. buying a box of it? How long to cook
it? Sounds like you'll be stirring more than once over a period of
time.

Because I've never used washing soda, don't know if it's even sold
here and didn't want to go to the store to look for something that
costs more than baking soda just so I could use a tablespoon's worth.
In any case, I was in the process of making pretzels and the baking
soda was making its transformation in the oven as I typed.

BTW: Thanks for the article, steve wertz. Did I read it correctly -
just soak the pretzels (not boil them) and rise them off? Great!
I'll try that method next time.

No need to cost it out, I'm not planning to sell them. You can do it,
but AFAIC the cost of my time, cost of gas plus the cost of wear and
tear on my less than one year old luxury car makes staying at home to
turn a half cup of baking soda (plus a penny or two of electricity)
into more washing soda than I'll use in a lifetime a real no brainer.
