Default PICs: Cheesemaking kit and soapnuts

Just getting the last bit of the required equipment together and then will
start making some hard cheeses. Till then, I might try my hand at some
mozarella and maybe some ricotta.

You are well equipped with all the necessary instruments. These instruments are very good to produce a good quality mozzarella cheese.

Which I will be doing quite soon.

Just waiting on some 15lt and 12lt stock pots to come up from Sydney to
start the hard cheeses.

And I've ordered an Italian Vacuum food sealer, which should be delivered
by Friday.

It's going to be used for the cheeses, the spices blends, and the
fish/chicken etc meats that I will be smoking in the smokehouse once I've
built it.
